Cowboy Bebop is in my top 5 fav anime of all time (with other bangers like Samurai Champloo and Gintama) so how do I put this? This show is both Cowboy Bebop and not Cowboy Bebop. It does nail a lot of the quirkiness of the show with touches of comedy, reverence, and pretty good action; but it's not a 1:1 adaptation, taking liberties throughout while still following the same overarching story. I do think it is better for it though, as the show kinda lives in its own lane if i'm being honest. If you go in expecting Cowboy Bebop IRL you might be disappointed, but if you approach this as more of a good space buddy cop comedy then you'll def enjoy it.
