I have been searching for years for a game exactly like this. I had heard of Elite Dangerous but after researching more I realized I didn't want that kind of intense pvp environment.
One day during the summer I walked into a GameStop. After looking at some games on the used shelf I singled out a copy of NMS. I took it home and started playing before the update files had finished downloading. I can say for a fact that the difference between its release and the current game is night and day.
I started playing a few months before the 2.0 update, and since that fateful day at GameStop I have spent 100+ hours exploring the vast galaxy while upgrading, surviving, and uncovering the deep lore behind this marvelous game.
The lore is unique but kind of vague--but it should be that way: after all, this game is about exploration. If you play you should be prepared to spend hundreds of hours (early game is considered 0-100 hours), and there is a sometimes staggering array of features, but luckily there is a very helpful in-game guide.
As for the community, don't worry. It's by far the least toxic community I have ever seen, and there's always someone willing to help--if you can find them--with spectacular cross-platform play. However, a word of advice: DO NOT use multiplayer until you have progressed fairly far into the game. The reason? People are too friendly and tend to give out egregious amounts of money/ resources to new players, and it ruins your game.
All in all, Hello Games over the years has outdone themselves time and time again with a breathtaking, spectacular game. I highly recommend this game to you if you're the kind of person who wanted to explore the Star Wars universe without having to kill hordes of stormtroopers or separatist droids.
