This is a great cookbook for a single person, diabetic or not. So many cookbook recipes call for very small quantities of individual ingredients. The remainder will probably be thrown out, i.e. 1/4 tbsp. of grated ginger, 1/4 cup tomato sauce, etc. The recipes in this book are delicious, easy to prepare and don't require you to have a wide assortment of ingredients on hand. A lot of them are staples in our cupboards.
