I've just finished watching Series 1 & 2 of Avec Eric on Australia's SBS Food channel and enjoyed every second of it.
Clearly, Éric Ripert is a chef of the first order as is clearly illustrated in the food and wine he serves in his restaurants, especially New York's Le Bernardin. In addition, he is able to explain and demonstrate the techniques he uses in achieving that, including the way he interacts with farmers and suppliers.
Even more important, Ripert is humane, even-tempered and affirmative in the way he treats his staff and others around him. It is not surprising that, in return, his front-of-house and kitchen employees apply themselves well to their work, helping him to achieve and maintain his high standards.
Avec Eric is much more than a cooking program; it provides insight into how good human interaction can enhance the work being carried out in any business or organisation. Éric Ripert is a clear leader in this field. He sets standards we could all follow.
