I first played the original FF7 back in 2001 when I was in middle school, and LOVED the original. I understand this is a remake and not a remaster, but I felt like they changed too much.
The graphics and audio all seems very good to me. I felt like the voice-acting and characters were all done very nicely.
The game has a lot of side content/fluff which in general is OK because you can skip most of it. However, I feel like the main storyline is drawn out too long, and drags a lot in parts. Midgar took ~4-6 hours in the OG game, but somehow they made this 20+ hours... And it shows in parts where you can tell they are simply trying to make the game longer, rather than having meaningful content.
Also not a fan of the action-based combat system, and would have preferred if they kept the game turn-based. Or at the very least, something like FF12 where you fight in the open-world but focus more on combat directions (attack/magic/item,etc.), rather than hacking/slashing.
If you love action-rpgs you might like this game, but if you prefer the older turn based rpg style like in FF1-10, this game might be a put off for you.
Personally - I would have been much happier with a faithful re-master of FF7 with updated graphics/audio and maybe some slight expanding on the story/character development (the backstory on Jessie was really cool I thought).
