I'm recommending the Acolyte. I had no expectations for it, and it flew under the radar. But it's one of the most original Star Wars stories in recent times. It's subversive in a manner that calls back to Knights of the Old Republic 2 - one of the best and most ambitious of all Star Wars stories, where the Jedi's moral superiority is called into question. In this case, the action takes place in a time of Jedi dominance, where what left of the dark side is persecuted, and where the republic government is very uncomfortable with the lack of oversight on the Jedi. There's a little bit of subtext there as if the Jedi is like the CIA. It also includes Witches, which is part of decentering the Jedi as the sole legitimate interpretation of the Force.
It's about two twin sisters separated through tragic circumstances. The way the Jedi wrap themselves in that story is a mystery that unfolds across the whole season. It has some pretty interesting moral and political themes.
It's nice to expand the universe of star wars with some original and inspired work here.
