This is from someone who sucks at dark souls games. The last souls game I tried was bloodborne and I had to summon for about 1/2 the bosses, loved the game but it was just too challenging for me at times. This game is a lot more manageable.
I’ve been playing for about 10 hours but the open world makes it much more approachable. If an area sucks, just ignore it and come back later when you’re leveled up. Also you can summon spirits to help you fight during most of the open world (might want to look up how to online) to help and there is still the ability to summon other players to help you out. I’m sure the dark souls veterans would frown on the strategy but for me it made the dark souls challenge easier. The only other thing I would say is that the first mini boss called tree sentinel in the open world, you can just sneak by him. Made the mistake of thinking you had to fight him immediately and almost gave up on the game after 2 hours of trying to beat him
