I watched the cartoon series as well as Korra. The only person I see missing is perhaps the second (I use that term loosely) maybe the best earth bender Aang encountered was Toph! Aang learned a lot of his earth bending from her and later from Bumi!
Otherwise from Toph missing, the series so far is on point!
