Eating foods at its natural source does not mean eating everything raw, how you arrived at that conclusion is baffling. It means eating non-processed foods. The body does NOT require carbohydrates to survive or thrive. Non-carbohydrate compounds, like amino acids from protein, are converted to glucose for energy. The body can also use ketones, chemicals created from fat, for energy instead of glucose. (This is, essentially, the whole reasoning behind the keto diet: Without carbs to use for energy, your body will begin to break down fat instead.) You might want to revisit your nutrition studies for facts about the body NOT needing carbohydrates. You might not WANT to give up your potato, but you do not NEED it.
Not sure, since you are in the biomedical sciences/nutrition field, if they taught you that in your studies you are due a refund, and if you continue in those beliefs I don't want to be a patient of that way of thinking.
If you only take one source of info as your complete research, you have failed. Try more than one source.
I am insulin resistant and follow a low carb (25-35 grams per day)/healthy fat/moderate protein way of eating. It keeps my pre-type 2 diabetes in check.
I hope you take the time and effort to research this more as you and your patients will benefit.
