Such behaviour is contrary to the most basic fundamental of food safety - keep your hand clean with frequent washing and NEVER put them near your face, Certainly never ever put your fingers in, or even up to, your mouth.
Peter Gordon's persistent breaches of this fundamental rule are not merely disgraceful examples to the show's audiences: they show what this restaurant owner probably does in his own commercial kitchen(s), and what he probably condones from his staff.
This breaches of food hygiene should NEVER be shown on TV cooking shows.
