I've watched this movie more times than I can count. It just never gets old. Is my all time favorite film. The loose ends as some see it, I agree they are result that the movie is too ambitious. When Jacob meets the hippie chemist, the plot does get somewhat mired. But I think the reason they didn't edit is because it goes to prove that Jacob must stop searching, he will stop clinging to life as a result of that meeting, and in the end, he will no longer try to find that reality. After that, we see he is starting to relax because he has lost all hope and is making his peace with Vietnam. Having seen this movie countless times, I do conclude that if it were mine to do over I would have done the chemist part differently. Because it def takes away from the shock and sadness of the ending by leading the viewer on a different alternative story line. However, in spite of that, Jacobs Ladder has no equal, in my eyes, as it's the best movie I ever saw. It's a metaphor for all things that we think are real, things that maybe we aren't so sure are "real", all of our grief and universal sense of loss. The film is a masterpiece.
