My favorite sourdough discard recipe that only uses baking soda, sugar and salt from @kingarthurbaking! I love that you don’t have to add any extra flour so the full tang from the sourdough discard really comes through.
These have an almost custardy, springy middle that soaks up whatever you top them with and a nice chewy bite. Highly recommend topping them with butter or peanut butter and jam!
You can just make one if you just have a little bit of discard or save up a big batch of discard to make a dozen—they’re super easy to scale!
To make these, you’ll need:
1 cup (227g) sourdough discard
1 teaspoon granulated sugar
1/4 teaspoon kosher salt
3/8 teaspoon baking soda
