Fascinating book but suffers from the need to ‘own’ the recipes, despite the fact that they are often well known under different names. This makes looking up Borek, for example, ludicrous, because it is indexed as Peynirli Boregi. This happens so often it’s annoying and appears slightly arrogant.
On many levels this is a book I have enjoyed reading. It’s nice to learn so much more about the origins and culturally shared elements of the recipes.
It is not a cook’s book though in my opinion.
