It's pretty, really dumb for them to tell the home chefs to put their own spin on a dish, only to have the judges complain about the changes/differences and then pick the professionals' traditional dishes.
Also the other two non-judging judges each week seem to heavily influence the judge who is blind-tasting the dishes with the knowledge they have from watching everyone cook. So even if the judge was leaning towards one of the home chefs, he or she is led to the restaurant chef.
