It does so many things well. At first, I didn't want to watch it because of the art-style but then it grew on me and I actually love it. The characters are all unique which makes their interactions all the more entertaining, it has such a good comedy aspect/appeal, does an exceptional job at world-building, has consistency with every episode(filler or not, I never feel like an episode was pointless), and many different sub-themes~especially when looking at the Straw Hat member's backgrounds/stories before joining the crew. All this is being said and I'm not even halfway through the series yet which is somewhat ongoing.
Many people tend to focus on the protagonist's goal stated at the beginning of the anime and keep a one-track mindset all the way through. If this is you, One Piece may not be the anime for you because it branches off into different sub-themes and arcs. Despite what people consider "filler," those "filler" episodes are there for a reason and what One Piece doesn't makeup in fast plot pacing they make up for in comedy and character development.
