Have had this book on my shelf for years. Refer to it so often that I decided to buy copies for all the cooks in my family. Last night I wanted to bake Ina Garten's excellent Chocolate Banana Crumb Cake but had no butter. What to substitute? Apple sauce and vegetable oil--I used grapeseed oil. Who knew? It's delicious as always. This book is a must-have for "Chopped Kitchen"-style cooks.
