What a way to bring my heritage up North to all of my friends. I have used many of the recipes and have enjoyed all of them. The great part of this book are the stories that accompany these delicious dishes. I had the opportunity to cook with Chef Folse in the late 80's at Woodlawn High School. We made Chicken and Sausage Jambalaya to feed the school. Like every great Chef, he put his heart and soul into that meal.
