Many of the restaurants are in tourist locales and the hosts encourage the owners to dig deep into local flavors and experiences. Where the show becomes problematic is the makeovers tend to fall back on the stereotypical rather than inspiring. A saving grace is the real life stories and testimonies from the owners as to why they ventured into the restaurant business which grounds the show and takes the narrative back from the show's shallow hosts.
