This is my all time favorite, having grown up in the Maghreb and spending most of my adult life in the Levant I was at a loss when I moved to the States as to how to find and prepare my favorite dishes. I had purchased other cookbooks of the region but the recipes were always a disappointment, this one is definitively not. I have been able to recreate everything from Couscous Judja to Salat Hetzelim. It really takes me back to my childhood in Morocco, Ethiopia and Greece. Worth every sous!
