Provence has a way of slowing the pulse, and nowhere does it more deliberately than Hameau des Baux, a hamlet of stone cottages folded into a five hectare olive grove near Les Baux de Provence. This summer brings La Villa, a new wing of ten rooms and suites with private terraces, each one dressed in vintage furniture and the kind of quiet, unhurried elegance that never quite announces itself. Under the shade of plane trees, a fountain hums in the village square, art appears between the olive trunks, and the light, that particular silvered Alpilles light, does most of the talking. Inside the storied 1932 restaurant at Raffles Grand Hotel d’Angkor, four new tasting menus have arrived, each one a love letter to a different chapter of Cambodian history, plated with the precision and warmth that has long defined this Siem Reap institution. The story begins in the healing gardens of King Jayavarman VII, the twelfth century Healer King who built more than a hundred hospitals across his empire and believed food and medicine were never far apart. It moves through the reign of King Sisowath Monivong, when Royal Khmer cuisine flourished as the world turned its gaze toward Angkor, and on into the palm fringed glamour of the 1960s, the golden age that reached its symbolic peak when Jacqueline Kennedy Onassis stood before the temples in 1967.
