If you are an aspiring pastry chef or chocolatier, this is an indispensable book. As a professional in the industry I have used the recipes and troubleshooting guides countless times (a few years ago I lost the dust cover, and now the hardcover is stained and some fo the pages are stuck together with caramel because I use them so much!)
As far as textbooks go, it is reasonably priced. As far as textbooks go, it is very easy to follow and understand.
