Certainly Harvey Wiley is one of America's greatest unsung heroes. His diligence in making food safe has protected the health and saved the lives of untold millions.
One of the mantras of Republicans is: too many regulations. Ìt is regulations that that assure us of safe food. That we get what we are paying for. That a pound of honey actually weighs a pound and that actually is honey and not some concoction of sugar and water with thickener and some fake flavors added.
That a pound of ground beef is made from a healthy beef under hygienic conditions not horse meat, not meat from a sick cow, nor meat butchered in filth nor otherwise mishandled.
Wiley persevered over several decades against food processors and legislators to safeguard our commercial food supply. His efforts culminated with the establishment of the FDA.
This book is an excellent read, well written and thought provoking. It lead me to think more about rules and regulations and how important they are to our collective well being.
