This is an amazing show that gives simple directions for cooking delicious food. I am reluctant to giving a five star rating only because the cooks are a little vague about the exact origin or local name of some ingredients.
As an example; when they cook fish they use a generic name. The use of Red Snapper is so vague that the range of possabilities is huge. The Red Sanpper that is most favored is the American Red Snapper (ARS) others are far from the texture and flavor of this variety. Rose snapper, Black fin snapper and Silk snapper (all called red snapper) have such a different taste and are nothing like ARS. The only thing in common is they all have a pink to red hue on their skin when sclaed.
