This book is revolutionary in its approach to healthy eating in advocating the link between high carbohydrate ( not starches) consumption and diabetes.
The subject is very complex and has led to many theories relating diet to human disease. What is not in dispute is that the incidence of diabetes is rising rapidly and the cost to the health service is enormous. We need more books like this and fresh(unbiased ) thinking ( and writing). Debate on the link between diet and human health ( and disease) is sadly very lacking. This book by a long-retired University Professor and academic Verner Wheelock is a masterpiece and will follow his previous books such as The Food Revolution.
